At 8 p.m. on Jan. 31, Escalante’s Resident Assistant (RA) team at Western gathered in the complex’s terrace to serve up ice cream to 40 students as well as themselves.

Word of the event spread through voice, fliers and Instagram, where each student was asked to bring their own bowl and spoon for a helping. These bowls were filled with vanilla, strawberry, chocolate and salted caramel ice cream made from Gunnison’s fresh white snow; condensed, whole and almond milk; and served up over the course of an hour.

Those who weren’t aware they needed to bring their own bowl were provided with a small red bowl courtesy of the staff. Each batch was lovingly improvised, and chocolate chips were available to top each scoop.

“I had a lot of fun putting the program together, and it was great to see so many people come and have fun, too,” said Andrew Huntsberry, a junior at Western and a Senior RA at Escalante.

Many students went back to their rooms after enjoying a few bites and expressing their gratitude. After haphazardly gathering many materials the staff didn’t expect to need—such as more snow and extra ingredients due to the incredible attendance—the Escalante crew celebrated by arm wrestling with each other.
